The Esopus Creek Farm has come to fruition and is providing us with its first harvest after 7 years of planning and remediation of the soil in the Hudson Valley. Our inaugural farmer, Jessica Swadosh hails from a diverse background in organic farming internationally from Ireland to New Zealand with many stops in between in America. She also has worked in kitchens in New York most notably Pure Food and Wine and Heirloom as a sous chef. Jessica brings the galaxy full circle in its effort to grow locally while keeping an eye on innovative ingredients from around the world to further incorporate eating locally and supporting local farms while dealing with the controversial issues
regarding world trade and petroleum based
agriculture.
